When a band can sell out Roseland and want to play a surprise set, they usually play the Mercury Lounge. When a band can play Hammerstein, they do their surprise sets at the Bowery Ballroom. And bands that can sell out Madison Square garden do their surprise shows at Irving Plaza.
Three days before the Red Hot Chili Peppers do a "surprise club show", Pearl Jam play Irving Plaza on May 5th. Here's the details (via BV):

I'd like to modify your theory and say in terms of secret shows:
Roseland = Bowery (i.e. Snow Patrol, Yeah Yeah Yeahs)
Hammerstein = Irving Plaza (i.e. The Strokes)
Madison Square Garden = Roseland (i.e. Madonna, Dave Matthews Band)
But I hope your theory is accurate when Radiohead comes to town because Irving Plaza beats the hell out of Roseland.
